Smashed Red Potatoes w/ Olive Oil
2 lbs. or new red potatoes
1 tsp. salt
1/2 tsp.pepper
8 Tbsp. eeoo
I put this on the grill in a cast iron pot. They were delicious.
It says to bake in oven at 450 for 40min.

Lemon-Lime Basil Shorbread Cookies

1c. all purpose flour
1/2 c. powdered sugar plus more for pressing cookies
1/2 c. chilled unsalted butter, cut into 1/2" cubes
2 Tbsp. sliced fresh basil leaves
1 tsp. finely grated lemon zest plus 1 Tbsp. fresh lemon juice
1/2 tsp. finely grated lime zest
1/4 tsp. kosher salt.
Heat oven to 375, place flour, 1/2 c. p.sugar, butter, basil, both zests, lemon juice and salt in a food processor. Pulse until large, moist clumps form. 1 Tbsp. on a baking sheet. 2" apart. Press with a measuring cup with powdered sugar. Bake 20 min.
Watermelon Granita

4 c. cuped seedless watermelon
1/2 c. sugar
1 Tbsp. fresh lime juice
Puree all ingredients in a blender until smooth. Pour into a metal baking pan. Freeze mixture for 1 hour. Stir, mashing any frozen parts w/ the backof a fork. Cover and freeze, mixture until firm, about 2 hours. Using a fork scrape granita until icy flakes form.
